do you bake just veggies?

It sounds like a good idea to just cut up a bunch of veggies and put them on a cookie sheet in the oven for a bit...with some seasonings. Has anyone ever doen this? any good ideas or tips for it? Are some veggies better than others to do this with?

I just had those brussel sprouts with hazelnuts for lunch today with some leftover grilled salmon.

My favorite thing to do. When I do this I have enough that I could really forgo the meat part of my dinner altogether.

I love to toss in: shallots or onion, garlic, sweet potatoes, mushrooms, brussel sprouts, red, orange or yellow peppers (or all three) any root vegetable such as carrots or parsnips. Go crazy and have fun. The only seasonings you really need are salt and pepper and if you do not add garlic cloves shake on a bit of garlic powder. But these all carmelize beautifully and will have a wonderful flavor!

Ps. I preheat the over to 375 and check for browning every 15 or so minutes

To take Jessica's idea a step further:

After your veggies are done, add it to some browned ground turkey. Toss it together, sprinkle some shredded mozzarella on top and put it back in the oven until melted. You might also add a can of diced tomatoes!

I just read the baked veggies thread. Do you bake for 15 minutes at 375 or until they're at your desired crunchiness? Do you eat these all at one meal or do they keep for leftovers? I have cauliflower to do something for supper.

For me, it depends on the vegetable. I like to roast mine so that they are slightly browned. I like broccoli cooked until many of them are almost black. It all depends on how you like your veggies. I also put the heat up a bit higher - 400 degrees, and turn them often.

Hi,

I'm new to the board - just started looking at it for the first time yesterday. Anyway, about the roasted veggies - do you wrap them in foil or just roast on a cookie sheet?

I've enjoyed looking at the many posts. Thanks.

I've actually been trying the Atkins/low carb, but I think the South Beach seems a lot healthier.

Hey! I spray olive oil on a cookie sheet and then put the sliced veggies right on it, then spray olive oil on the veggies. no foil.

enjoy! this tastes amaaaaaazing. 8 months into the south beach diet, i wish i would have discovered this sooner!
