This is probably one of the best dinners I have tasted since being on the SBD. Kinda made it up myself. You can season the sauce however you like or you don't even need to season it at all. I just like to add extra stuff to it to give it an extra kick. I like to add the milk to it to make the sauce a little thinner, you don't have to it though.


Chicken Alfredo over WW pasta


1 jar of Carb Options Alfredo Sauce

4 chicken breasts

2 tsp. garlic

pepper

parsley

1 tsp. onion powder

1% milk

Whole Wheat noodles

Parmesan

Put Carb Options Alfredo Sauce in pan and turn on low heat, add garlic, a little pepper, parsley, onion powder and a little milk. Meanwhile cook chicken breasts over medium heat in pan, making sure each side is golden brown and centers are fully cooked. Cut breasts into little chunks and add to Alfredo Sauce. Pour over Whole Wheat noodles. Top with Parmesan.

Is the carb options product low fat too? Seems too good to be true.

I was under the impression that we could have pretty much anything from the Carb Options selection. The alfredo sauce has 10 grams of fat. It has no sugar though which is a plus. I eat this only a couple times a month.

Many of the low-carb products on the market are high in saturated fat, trans fats, and large quantities of sugar alcohols. They also typically contain other ingredients that are not South Beach Diet-friendly. In general, they are not recommended. The South Beach Diet is not a low-carb diet. The focus of The South Beach Diet is on selecting the right carbs and fats.

Ok, I do realize that the South Beach Diet is not a low carb diet. And the ingredients in this sauce looked ok to me. I generally look at ingredient lists and then decide for myself if it is legal or not. The reason why I was under the impression that the Carb Options things were ok is because I read on this website that some of them were ok, like the Barbecue Sauce and the Salad Dressing. Also, when eating Spaghetti, Dr Agatston says to choose Low Sugar Spaghetti Sauce. The only Low Sugar Spaghetti Sauce I could find was the Low Carb Spaghetti Sauce. So, I am finding that some Low Carb things are ok, and then I am sure there are some that are not. Here are the ingredients for the Carb Options Alfredo Sauce, let me know what you think:

Water, Cream, Soybean Oil, Parmesan and Romano Cheeses, Modified Corn Starch, Enzyme modified egg yolks, salt, maltodextrin, autolyzed yeast extract, disodium phosphate, xanthan gum, garlic powder, black pepper, natural flavors.


Here is the Nutrition Facts:

Calories: 110

Total Fat: 10g

Sat. Fat: 3.5g

Cholest: 30mg

Sodium: 390mg

Total carbs: 2g

Fiber: 0g

SUgar: 0g

Protein: 1g

It's the cream that makes it high in fat and a no-no for South Beach.

Well, thanks for the info Cathy. It makes me sad that I can't have this anymore! I have been enjoying it now for a couple of months without a problem. But, I was thinking, is there an Alfredo sauce that I might be able to make that is South Beach friendly? TIA

I would try a can of evaporated skim milk and some grated parmesan cheese.
