Quick Mexican Chicken Skillet

Here is a quick dinner idea I threw together 'in minutes' tonight:
1 lb. boneless chicken breast cut into strips
1 can black beans, drained
1 can diced tomatoes (no sugar varieties)
1 small onion, sliced
1 tbs. chili powder
1/2 tbs. cumin
1/2 tbs. salt
1 tbs. vegetable oil
lf shredded cheddar cheese
Mix spices together and sprinkle over both sides of chicken. Brown chicken in oil and remove from skillet. Saute onion until semi-soft. Add beans and tomatoes to pan. Return chicken to pan. Simmer for a few minutes to make sure chicken is cooked through. Top with cheese. I had mine as is, and served to the kids over rice.

This sounds great.
I wanted to bump this up because I just made this tonight and it was very yummy!
I used ground turkey instead of chicken and I cooked the onions first then added the ground turkey, then added the spices, beans and 2 cans of diced tomatoes, I used the kind that had green chilies in it...it was excellent!

I am glad you found this recipe and you enjoyed it! This is a staple meal in my house - I make it with ground turkey too. It is so quick and easy and you can almost add anything you can find in your pantry.
