Stuffed Peppers

Stuffed Peppers - (good for all phases)
3 bell peppers (any color)
2 Tbs. canola oil
1 cup chopped onion
1 cup chopped sweet red pepper
1 1/4 pounds lean ground beef or turkey
1 Tbs. chili powder
1 tsp. oregano
1/2 tsp. salt
1/4 tsp. black pepper
1/4 tsp. ground cumin
1 can (15.5 oz.) small white beans, rinsed & drained
1/2 cup bottled barbecue sauce
2 Tbs. tomato paste
1/2 cup reduced-fat shredded cheddar
1/2 cup sour cream, for garnish
1. Heat oven to 350 degrees. Cut peppers in half lengthwise, remove stem and seeds.
2. In a large skillet, heat oil over medium-high heat. Add onion; cook, stirring, 3 minutes. Add chopped red pepper; cook 2 minutes. Add ground meat; cook, stirring occasionally, until meat is no longer pink, 5 minutes. Stir in chili powder, oregano, salt, pepper and cumin; cook 2 minutes.
3. Meanwhile, coarsely mash half the beans. Stir mashed beans, whole beans, barbecue sauce and tomato paste into meat mixture. Reduce heat to medium; cook 2 minutes. Remove skillet from heat.
4. Fill each pepper. Top with cheese. Bake at 350 degrees until heated, 15 to 20 minutes. Garnish with sour cream.
Serves 6
