Fish in Lemon Juice
Serves 4
4 large fillets of fish (e.g. sea perch or blue grenadier)
2 teaspoons fresh tarragon, finely chopped
2 teaspoons basil, finely chopped
coarsley ground black pepper, to taste
2 small onions, sliced thinly
2 lemons, sliced thinly
juice of 3 lemons
2 tablespoons dry white wine (optional)
Method:
Cut four pieces of foil, each big enough to enfold a fish fillet comfortably. Spray foil well with cookking spray. Place fish fillets on foil. Sprinkle each fillet with the herbs and black pepper. Arrange serveral onion rings and a slice or two of lemon on each fillet. Mix lemon juice and white wine; pour over fish. Wrap each fillet well in the foil, sealing along the top so juices are not lost during cooking. Place foil parcels, sealed side up, on a baking tray. Bake at 180 for 30 minutes. Open foil along sealed edge and serve immediately.
