Fettuccine Carbonara

Thought I'd share this one. It's a Weight Watchers recipe that I've had before. It's quite tasty and seems to be SBD friendly. Kinda tastes like fettucine alfredo, just not as bad for you.
Fettuccine Carbonara

½ lb fettuccine(whole wheat of course)
½ c. evaporated skimmed milk
¾ c. egg substitute
¼ c. + 2 Tblsp grated Parmesan Cheese
¼ c. low-fat milk
¼ tsp. Salt
¼ tsp. Fresh ground black pepper
¼ tsp. Nutmeg
6 slices turkey bacon, cooked and crumbled
2 Tblsp. Chopped parsley
Cook the fettuccine according to package directions, rinse, and return to pot.
In a medium bowl, combine the evaporated skimmed milk, egg substitute, ¼ c cheese, milk, salt, pepper, and nutmeg.
Add the milk mixture, bacon, and parsley to the fettuccine. Place the pot over lowm heat and cook, stirring quickly, until the mixture becomes creamy. Do not overcook, or the sauce may curdle. Serve immediately.
