I tried the cabbage casserole and really enjoyed it. I added a bit of soy chorizo and hot sauce to the meat and it added some kick!!

However, my rice never really cooked and it was crunchy. Did this happen to you? Have you tried barley instead for a smoother finish.

Hi Lisa:

It's important when you add the tomato sauce & water to the meat mixture that you bring it to a boil and then reduce it to a good continuous simmer. The rice should be half cooked by the end of 20 minutes and finish up during baking. Good Luck!

I also made the cabbage casserole last night and loved it !! My Rice came out just fine... the only change I made was use just a can of plain crushed tomatoes instead of tomato sauce.

I did it exactly this way and the rice came out fine. It is hard to imagine why the rice wouldn't cook in the oven after, even if it didn't cook in the pan. Maybe it was old rice or something.
