Cream of broccoli soup

This may not sound like the best on paper, but it is yummy! If you like broccoli you should try it. I adapt it a whole lot to suit my tastes (I'll add the notes) and you could play with it too. As you'll notice, I hate cauliflower (but might be willing to try it in this soup again), and the spicy stuff I leave out.

Cream of Broccoli Soup

serves 6

2 stalks celery with leaves

2 cups cauliflower florets (I omit)

1 clove garlic (I omit)

1/2 cup water

2 cups coarsely chopped cooked broccoli

1 teaspoon salt (or salt substitute)

1 dash cayenne pepper (I omit)

1 cup chicken broth

1/2 cup heavy cream (or low-fat substitute)

coursely ground black pepper (I omit)

Cut celery stalks crosswise into three parts.

In medium pot combine celery, cauliflower, garlic, and water. Simmer for 15 minutes.

Transfer contents of pot to blender and add broccoli, salt, and cayenne pepper. Cover and blend at high speed.

Uncover while blender is running and add broth and heavy cream.

Add black pepper to taste. Serve hot or chilled.

Just wondering, what is a low-fat substitute for heavy cream? I see it used in a lot of recipes that I would like to adapt for SB. THanks, Brandi

You can substitute fat-free 1/2 & 1/2 or evaporated skim milk.
