Pumpkin seeds are fine for all phases!  A serving size is 3 tablespoons or one ounce.


Roasted Pumpkin Seeds


Don't throw out the seeds when making Jack-O-Lanterns or cooking fresh pumpkins, they make great snacks that are rich in fiber as well as vitamins B and E.  Kids especially love them.  Purists will want only salt as a seasoning, but if you're feeling adventurous, experiment and have fun with seasoning blends.


Ingredients:


1 1/2 cups pumpkin seeds
2 tsp. olive oil or canola oil
salt to taste
Options to taste:  garlic powder, cayenne pepper, seasoned salt, Cajun seasoning blend

Preheat oven to 300 degrees.  While it's okay to leave some strings and pulp on your seeds (it adds flavor), clean off any major chunks.  Toss pumpkin seeds in a bowl with the oil and seasonings of your choice.  Spread pumpkin seeds in a single layer on baking sheet.  Bake for about 45 minutes, stirring occasionally, until golden brown.


Spicy Roasted Pumpkin Seeds


Ingredients:


pumpkin seeds
olive oil
salt
cayenne pepper
cumin

Separate the seeds from the stringy pumpkin guts, rinse well and dry with paper towels.

For each 2 cups of pumpkin seeds, mix in a bowl: 2 TBS olive oil, 1 tsp. cayenne pepper, 1/2 tsp. cumin and 1 tsp. salt.  Add seeds to bowl and toss to coat evenly.


Spread out on a baking sheet.  Roast in an oven preheated to 350 degrees for 30 minutes or until golden brown.  Stir the seeds every 10 minutes or so during the roasting so that they will cook evenly.
