FLOUNDE PUTANESCA

1 lb. flounder, sole or other white fish filet

1 can diced tomatoes (no sugar added), drained

1 can artichoke hearts, sliced

1 can anchovies, drained

4 cloves of garlic, minced

Fresh steamed spinach

Coat bottom of baking pan with nonstick spray. Place fish in pan, cover with remaining ingredients. Bake for about 20 minutes at 350 degrees. Season with salt and pepper, serve over bed of spinach.
