Oatmeal Raisin cookies

Oatmeal Raisin cookies

just took these out of the oven. They smell heavenly and taste delicious. I think they are going to be addicting though so I'm going to put most of them in the freezer.

INGREDIENTS:

1 cup canola oil

1 cup Splenda

1/4 cup sugar free maple syrup

2 eggs

1 teaspoon vanilla extract

1 cup whole wheat flour

1/2 teaspoon baking soda

1/2 teaspoon salt

1 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

4 cups rolled oats

1 cup raisins

DIRECTIONS:

Preheat oven to 350 degrees F (175 degrees C).

In a large bowl, mix canola oil, Splenda, maple syrup, eggs and vanilla until well blended. Combine the flour, baking soda, salt, cinnamon and nutmeg; stir into the sugar mixture. Mix in the oats and raisins last. Drop by rounded spoonfuls onto the cookie sheet.

Bake for approx. 9 min in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.

Sounds great but can a CL comment on amount of oil and raisins? Are these both OK?

Just curious.

Raisins are a phase 3 food.

I got 34 cookies out of this batch so each one has approx. 1/2T of oil in it and 10 or so raisins. Even without the raisins I wouldn't make it part of a phase 2 diet unless you have a lot of willpower. They really are quite tasty. They are a very good phase 3 treat though.
