Thanksgiving Ideas ???

I am trying to get my MENU ready for the Thanksgiving Dinner that I will be having at my house. Though some of the relatives will bring some items, I want to make sure I can enjoy some of the goods myself. I do have some dibetics (sp?) in the family so I am careful with that end of things. Searching the site, I have found some ideas, http://messageboards.ivillage.com/n/mb/message.asp?webtag=iv-fbsouthbeach&msg=1539.24

However, I am looking for a 'stuffing'-- i thought maybe some Wasa crackers processed... ??? any ideas????

I think thanksgiving is a perfect south beach eating opportunity!!

Here is what I have been thinking about..

Rotisserie turkey. We are in CA so using BBQ is easy.

Baked sweet potatos or some sort. Maybe with chipotle - I love the combo.

South beach mashed califlower

Sauted green beans

Stuffing made with rye bread or wheat bread

Dessert-

pumpkin ricotta "cheesecake" on nut crust - I am going to experiment to come up with a recipe.

Apple cobbler made with oats and wheat flour

I have to see how many are coming to decide if I need both or just one.

A little red wine, and it is a feast!

What are you doing for your stuffing? the normal with rye/ww breads?

I like that crushed pecan crust... its great with the 'cheesecake' filling!!

I would just pick your favorite bread and dry it in the oven.

Use chicken stock instead of a lot of butter to keep the moisture up.

It should work. Maybe try out a batch before the big day.

The fall issue of Eating Well has an excellent Sweet Potato Casserole recipe. I made a few adjustments to make it even more SB friendly and everyone loved it. The best part is it can be made up to two in advance and baked Thanksgiving Day.

Can we post recipes from a magazine here and not be in copyright violation?

Sweet Potato Casserole

2 1/2 lbs Sweet potatoes(3 medium), peeled and cut into 2 inch chunks

2 large eggs

1 TBS canola oil

1 TBS honey

1/2 cup 1% milk

2 tsp freshly grated orange zest (I left this out)

1 tsp vanilla extract

1/2 tsp salt

Topping

1/2 cup whole-wheat flour or oat bran flour(I prefer this as not as strong tasting)

1/3 cup packed brown sugar (I did 1/6 cup brown sugar and 1 1/4tsp brown sugar substitute)

4 tsp Orange juice concentrate(I left this out)

1 TBS canola oil

1 TBS butter, melted (I used trans fat free margarine)

1/2 cup chopped pecans

1. Cook sweet potatoes in lightly salted water until tender. Drain and mash.

2. Preheat oven to 350. Coat 8 in. square or 2 qt. baking dish with cooking spray,

3. Whisk eggs, oil and honey in a med. bowl. Add mashed sweet potatoes and mix well. Stir in milk, zest, vanilla and salt. Spread in baking dish.

4. Topping: Mix flour, brown sugar, oj concentrate, oil & butter in a bowl. Blend with a fork or fingers until crumbly. Stir in pecans and sprinkle over sweet potato mixture.

5. Bake until heated through and top is lightly browned. 35-45 minutes.

Steps 1-4 can be done up to two days in advanced.

10 1/2 cup servings.

Nutrition Per serving if prepared per magazine:

223 calories, 10g fat(2g Sat, 5g Mono); 46mg cholesterol; 31g carbohydrate; 4g protein; 4g fiber.

While not something to be added to your weekly diet, it makes a delicous treat without all the guilt of an original sweet potato casserole.

You ladies might not like my answer, but I fully intend to eat REAL stuffing on THanksgiving.
