Breakfast "cookie" challenge

Breakfast "cookie" challenge

I thought I would throw out a challenge to you all. Help me perfect a new recipe for a phase II on the go breakfast cookie.

I gave it a shot and actually was pleased with my results. But I am sure that with help it could be even better! I started with the South beach pancake idea and ended up with the following...

Mix with a hand blender:

1 cup oats

3/4 cup low fat ricotta

2 tsp vanilla

2 tsp baking powder

1.5 tsp cinnamon

1/4 tsp nutmeg

1/2 tsp salt (might do less next time)

3 eggs (I realize that you can also use 6 egg whites)

2 Tbl SF maple syrup (might use more next time)

4 pk equal (will use more next time - say 6)

Then mix in by hand:

1 additional cup oats (or a bit more to give it body)

chopped walnuts

dried fruit (well, I used chopped sauted apples because I didn't have any dried fruit)

Bake like cookies at 375 for 14 minutes.


So, let me know if you can offer suggestions or ideas! I put two in a baggie and put them in the freezer for an on the go breakfast!!
