Hey there! I haven't even started SBD yet, officially starting on Monday. I got my Fall edition of Homebasics magazine today and found two yummy sounding recipes that I believe are SBD friendly.

Green Bean and Feta Salad

1/2 lb. green beans, trimmed
1/3 cup Wish Bone olive oil vinaigrette dressing (if this is not friendly, please let me know)
2 tblsp. chopped fresh cilantro or mint
1 tblsp. chopped shallot or onion
1/8 tsp. grated lemon peel
1/4 tsp. salt
1/8 tsp. black pepper
1 large head lettuce, rinsed, patted dry, torn into pieces
4 oz. feta cheese

In medium saucepan cook beans in boiling water 6 minutes, until crisp tender. Drain and rinse with cold water until cool.
In medium bowl, toss green beans with 2 tbsp dressing, cilantro, shallot, lemon peel, salt and pepper.
Just before serving, toss lettuce with remaining dressing. On serving platter, arrange lettuce and top with green bean mixture. Sprinkle with feta.
Makes 4 servings

Spinach Salad with Portobello Mushrooms and Grilled Chicken

3 medium onions, cut into wedges
1/2 cup with bone italian or house italian dressing
4 large portobello mushroom caps
1 (10 oz.) pack fresh spinach, trimmed, rinsed, patted dry.
2 boneless skinless chicken breasts, grilled.

Preheat oven to 450 degrees.
On bottom of pan, toss onions with 2 tblsp. dressing. Add mushrooms in single layer. Roast 25 minutes or until veggies are tender. Slice mushrooms and toss with 2 tblsp. dressing. Set aside.
Just before serving, toss spinach with remaining dressing. On platter, arrange spinach, then top with mushrooms and chicken. Sprinkle with parmesan cheese if desired.
