Just wanted to offer an old recipe that ought to work for all phases. It has been a family favorite for over 10 years.

It used to be complicated, but over the years, there has always been some ingredient that was unavailable, so now it is down to it's basic form, but it's very easy, and very healthy.

Refried Bean Soup

2 large cans of Fat Free Vegetarian Refried Beans (or 4 small)
1 medium onion, chopped
1 - 2 cans diced green chiles (depending on taste - I use 1 can)
Low sodium fat-free chicken broth (1 or 2 cans?)

Saute the onions in Pam. (Use a 2qt pot). Add the refried beans, chiles, and enough chicken broth to reach the desired consistency. Cook over low heat, stirring often. Top with low fat cheese (optional). You may need to add salt - just taste first.

The original recipe had red peppers, top sirloin, corn etc. You get the picture. But we like it just fine the easy way!

Refried beans usually have quite a bit of fat in them. As long as they are not pinto beans and they are low in fat.
