It's a bacon cheeseburger quiche that I used to have when I was on Atkins. How can I make it SBD friendly??

It's really tasty, and I loved it for breakfast!!

Ingredients:

a.. 1 lb. very lean hamburger

b.. 1 small chopped onion

c.. 4 slices crisp-cooked bacon, chopped in bits

d.. 3 eggs

e.. 1/2 cup mayonnaise

f.. 1/2 cup half-n-half

g.. 8 oz. shredded chedder or swiss cheese

h.. garlic powder to taste (optional)

i.. white pepper

Brown hamburger in skillet with onion. Remove and mix in bowl with

bacon pieces, breaking up any larger clumps with a fork or pastry mixer

until you have a fine mix. Drain well of any excess grease and press into the bottom of a deep-dish pie pan. Set aside.

Preheat oven to 350°F.

Combine remaining ingredients in mixer bowl and whip well. Pour

mixture over beef "crust" and bake 40-45 minutes until top is browned and

"set".

Cool 15- 20 minutes before slicing. This can be packaged in Ziplocs or

plastic containers for meals quickly microwaved over the next 3-5 days. (Does not freeze well, though.

I would simply substitute Turkey Bacon (Louis Rich is my favorite), Land O Lakes fat free half & half and lite cheddar or swiss.

Use lite (not sugar-free) mayonnaise.

Maybe use ground turkey instead of hamburger? Lean hamburger is okay but ground turkey would have less fat.

This is yummy, it was a staple when I was on Atkins. I would eat it for dinner, then the next morning, I would have it for breakfast with a slice of tomato on top.

you make it in a pie plate, so I used to cut it into 8 slices, I would eat 2 at dinnertime, and 1 for breakfast.
