I  am experimenting with the whole chicken in the crock pot recipes... I put a whole chicken (I skinned it - Ewwww!  Thank G-d for disposable gloves!) in my crockpot just now.  :)  I stuffed with carrots, celery & half a onion and made a trivet from them too (thanks Cathy)... seasoned it, and put a halve lemon against it (no room inside) and poured in a can of 99% fat free chicken broth.

Our new recipe is a spinach souffle. When your seven year old asks for seconds of the "green stuff" something must be right.

1 pck. frozen chopped spinach

16 oz. 1% Cottage cheese

8 oz. 2% shredded Cheddar Cheese

2 eggs beaten

Mix all together, put in sprayed 8 x 8 baking dish. Bake 45 minutes at 350.

I do a variation on this theme. I use part skim ricotta and part skim mozarella with a twist of fresh gound nutmeg!
