over the weekend I cooked up about 10lbs of tomaotes. Any ideas of what I can add to them apart from making soup. I would love to find a sweetish sauce using splenda (add peppers, onions, muchrooms etc) that I can use with chicken but not having much luck.

I havent done any 'real' cooking for years as the kids and I have lived off ready cooked meals, but I would like to change that! Dug out my pressure cooker as well, just need to recall how to use the damn thing....LOL.

This is what I'd do, to make a sweet sauce without any sugar OR splenda.

I'd chop up a bunch of onions -- probably at least 3 medium sized ones. Add a bit of olive oil and a smidge of butter to a heavy bottomed pan. Turn the heat on medium-high. When the butter melts, add the onions and cook over medium heat until they get nice and carmelized. Take them off the heat and set aside. In the pan, sautee some sweet italian turkey sausage, celery, and carrots. Cook til sausage is browned (or almost done) and veggies are translucent. You could add some sliced mushrooms at this point and cook until tender. Then add the onions back and then add your tomatoes. Add salt, pepper, oregano, and any other herbs you like, bring to a simmer, then cook for 20 minutes or more on low. Should be nice and sweet and rich!
