Yummy Chili and Crockpot Stew recipe

Chili



2 lbs. hamburger

1 large onion, chopped

3 garlic cloves, chopped

2 cans of red beans

1 can tomatoes

1 can green chilis

1 tsp. chili powder

2 tsp. ground cumin

2 tsp. dried oregano

1 TB sweet paprika

1 tsp. cider vinegar

1 TB salt

1/2 tsp. ground red pepper

1 tsp. cilantro

2-3 cups of water

3 TB cornstarch (to thicken)



Shredded cheese

Green onion

Sour cream



Brown meat and onion in skillet. Put in large pot. Add the garlic, red beans, tomatoes, green chilis, chili powder, ground cumin, dried oregano, sweet paprika, cider vinegar, salt, ground red pepper, cilantro and water. Heat to boiling. Simmer for one hour, stirring occasionally. Add cornstarch (dissolve cornstarch in a little water before adding), stir. Simmer for 10-15 minutes longer. Serve with shredded cheese, green onion and sour cream.




Crockpot Beef Stew



2-4 TB. whole wheat flour

12 ounces beef stew meat

2 TB cooking oil

2 cups vegetable juice

1 cup water

1 TB worcestershire sauce

1 1/2 tsp. instant beef boullion granules

1 tsp. dried oregano

1/2 tsp. dried marjoram

1/4 tsp. black pepper

1 bay leaf

1 medium onion, cut into thin wedges

2-3 stalks of celery, cut up

3 cups cubed potatoes

1 1/2 cups green beans

1 cup sliced carrots



Place flour in plastic bag. Add meat cubes, shaking to coat. In a skillet brown meat in hot oil. In a crockery cooker layer meat, onion, celery, potatoes, green beans and carrots. Combine vegetable juice, water, worcestershire sauce, boullion granules, oregano, marjoram, pepper and bay leaf. Pour over meat and vegetables. Cover and cook on low for 10 to 12 hours or cook on high for 5-6 hours. Remove bay leaf. Enjoy.

Are these 2 recipes for phase 1 also???

Just starting out and not quite sure yet what recipes are for what if they arn't labeled. They look amazing and would love to make them this weekend to start my WOE off right.

I would omit the corn starch from the first recipe for Phase I and maybe even Phase II (anything "starch" is not a good thing).

For recipe 2 you will need to leave out the potato in pretty much all phases. Also no whole wheat flour in Phase I.

Cornstarch is ok for cooking in Phase 2 as long as it is in small quantities. You can easily omit the cornstarch for Phase 1. All it is is a thickener.

I make the stew recipe for the whole family so I leave in the potatoes and then just pick them out of my bowl. You don't need to worry about using the WW flour, it is just used to coat the meat. You can brown the meat without coating it. I am not sure if carrots are ok on Phase 1. I think they are just a Phase 2 food. But you can easily pick them out or just not add them at all. Hope this helps.

You know if you are going to use a starch to thicken, might I recommend masa (ground corn flour). It is incredibly good in chili and thickens it right up. Just adds a wonderful taste.

I didn't add the masa to my chili in phase I and the beginning of phase II but now that I am fully in phase III I use it.

Try it and let me know if you like the results!!

Thank you so much for posting these!!!!

My dh came down with a bad cold yesterday, so I made a big pot of the chili last night to cheer him/clear him up. It was a big hit!

I used one fresh jalapeno pepper minced instead of the can (couldn't find canned) and I used 2 cups of water and didn't bother with the cornstarch (although I'm open minded about it, just didn't seem to need it).

This was a keeper in our household! Thanks again. Can't wait to try the stew. . .

HI THERE, I AM SO GLAD THAT YOU LIKED THE CHILI. I REALLY LIKE IT TOO. ABOUT THE JALAPENOS. I THINK THE RECIPE CALLS FOR CANNED GREEN CHILIS, NOT JALAPENOS. BUT, I AM SURE IT TASTED GOOD WITH THE JALAPENOS! I WILL HAVE TO TRY IT THE NEXT TIME. I AM SURE YOUR DH LOVED HAVING HOT CHILI WITH HIS MISERABLE COLD. I LOVE MAKING HOT SOUPS AND STEWS WHEN ANY OF US HAS A COLD AND WHEN IT IS COLD OUTSIDE. THE STEW IS SPECTACULAR, I AM SURE YOUR FAMILY WILL LOVE THAT ONE TOO. HAVE A GOOD DAY!

I think that chopped green chilies are just jalapeno's that have been chopped and preserved in vinegar for canning.

I honestly thought that green chili peppers and jalapeno peppers were different from each other. But, I could be wrong. I am not a pepper genius, I don't cook with them much. Cathy, you are probably right, they probably are the same thing. Who knew. ;)
