Someone suggested trying a crustless quich for a quick breakfast idea. I would love to try it but I'm having some problems with the recipes I have found. I am lactose intolerant so I can't have any sour cream, cream cheese, or cottage cheese. I can have milk because there is a lactose-free variety. Are there any quiche recipes that would work??

You can substitute evaporated skim milk for any other dairy product in the recipe.

I don't think there is any evaporated milk that is lactose-free. At least I haven't seen any. I'll just keep trying to find a quiche recipe that only calls for regular milk.

I made a quiche recipe this week, it called for half & half but I didn't have any- just 1/2 cup I think. I put regular milk instead and it turned out just fine. Find a quiche recipe you like and try regular milk instead of the other dairy. It might turn out well.

Thanks everyone for the great ideas! I found a recipe on the Food Network website and adapted it to be low-fat, crustless, and lactose-free! It tastes great!
