Good Morning Muffins

3 eggs

1/2 cup of splenda

1/2 cup canola oil

1 cup grated apples

1 cup of grated carrots

2 cups of whole wheat flour (I used white whole wheat flour)

1 tablespoon baking powder

1/4 teaspoon salt

1 teaspoon of cinnamon

Preheat the oven to 375. Lightly spray a 12 cup muffin tin or line it with paper cups.

Blend the eggs,splenda, and oil until well combined. Stir in grated apples and carrots. In a seperate bowl, sift the flour, baking powder, salt, and cinnamon.

Blend the dry ingredients with the apple mixture until just combined. Spoon the batter into the muffin tins and bake for 25 mins or until golden brown. Makes 12 muffins

I made these last night. They get a thumbs up! Not too sweet, but just right with the addition of the apples. I also threw in some walnuts.

If you ask me, this is a nice way to get some added fiber in the mornings! And though carrots aren't veggies we can enjoy too often, having them in the muffins also helps sneak in some veggies -- even if you eat these as a breakfast-on-the-go.

So bottom line, I agree, these are GOOD morning muffins. Thanks for sharing.
