Anyone try cranberry sauce with Splenda

Has anyone tried making their cranberry sauce with splenda instead of sugar (I don't like the canned stuff - I always make my own). I asked someone in my office who bakes with splenda because her husband is diabetic - but she does her cranberry sauce with sugar because she's not sure if it would congeal with the splenda. So I'm curious to see if anyone's tried it.

It's only a condiment so it's not the end of the world to me if I make it with sugar - I usually only take a small portion.

I don't know about a sauce, but I'm sure you could make a cranberry relish w/ splenda. I always make this, though usually w/sugar. I like it better than sauce w/turkey: In a food processer, puree one bag of cranberries w/one orange (preferably organic so the peel doesn't have pesticides). Add sweetener to taste.

Cranberry Sauce

Ingredients:
1 cup baking Splenda or other granulated artificial sweetener
1 (12 ounce) package fresh cranberries
1/2 cup water
1 tsp lemon juice (optional)

Directions:

In a saucepan over medium heat, dissolve the sweetener in the water (and lemon juice, if using). Stir in the cranberries, and cook on medium-low until they pop open(usually about 10 minutes). Stir and remove from the heat. Transfer to a bowl and cool. (Sauce will thicken as it cools.)

Thanks Cathy - that's the recipe with the splenda replacing the sugar. I'm assuming that since it was on the website it was tested :-)

Cranberries are a berry and can be introduced in phase 2.

Tx again Cathy - I know it's OK for P2 - what I meant by the testing is that I hope they tested it to make sure that it congealed with Splenda. I'm going to try it anyway - if it doesn't work, I'll buy another bag of Cranberries and make it with sugar.

You might note too that the recipe said "Baking Splenda", I saw this at walmart just this morning.

I tried making cranberry sauce with Splenda, and here are my comments. I split the bag in half and made 2 batches, one with just Splenda, and one with half Splenda and half sugar.

Batch 1: 1/2 bag cranberries, 1/2 cup water, 1/2 cup Splenda

Comments: I thought it was very sour. DH called it bitter, but he calls anything witha sour or funny taste that he doesn't like bitter (it's a language thing.) It didn't set at all.

Batch 2: 1/2 bag cranberries, 1/2 cup water, 1/4 cup Splenda, 1/4 cup sugar

Comments: The taste was perfect, we couldn't tell it from the pure sugar recipes I've used in the past. It even set well.

I do have to make one comment, we have been doing Phase 3 SBD for the last month for Ramadan, and have been eating some sugar and Phase 3 foods fairly regularly. Now that our holidays are over we are going to go back on Phase 2 and get our weight loss on track. I'll taste the cranberry sauces again in a few days and let you know if the taste comments change.
