how do you make spinach quiches

Hi Everyone,

I seen on here where phase 1 was aloud to have spinach quiches, but I don't know how to make them. Does anyone have a recipe?

I don't even mess with the paper muffin liners, just spray the muffin pan and pour the mixture in.

Here's my version. You get the meat in with the quiche, and it serves as a crispy "crust"!


Turkey "Quiche" Tarts Florentine


Ingredients:



12 thin slices of deli turkey or turkey ham

10 eggs, egg whites, or the equivalent in egg substitute

1 cup grated, low-fat white cheddar, swiss, or mozzarella

1 teaspoon grated Parmesan

2/3 cup frozen spinach (thawed and drained)

1/2 cup chopped cooked asparagus, artichoke, or mushroom

1/2 teaspoon salt

1/4 teaspoon pepper

1/2 teaspoon garlic powder

*1/2 teaspoon italian seasoning (optional)

Olive oil spray or PAM



Instructions:



1. Spray a 12-count standard muffin tin with non-stick spray

2. Line each muffin mold with a slice of turkey

3. Combine all remaining ingredients in a bowl and mix until incorporated.

4. Fill each turkey "cup" with egg filling

5. Bake at 350 degrees for 15-20 minutes.

6. Allow to cool before packaging into bags. Makes 6 servings of 2 quiche cups.
