Another question :-). For the past few years I've brined my turkey (soak it overnite in lots of water, salt, sugar, some spices, oranges, and limes) - it's well worth the trouble and makes for a really moist turkey.

Question - is it OK to use the sugar/fruits (you do rinse the turkey when it comes out of the brine)?

Also, for the "fat" on the turkey to keep it moist while cooking - Thanksgiving is the one time of the year I use butter, but I'm skipping that this year. Will smart balance cook OK or should I just use some canola oil?

Since you rinse the turkey after you brine it - I would go ahead and not worry about it.
