I was trying to figure out how I was going to cook my boneless, skinless Chicken tenderloins - I wanted something different.
I found this recipe on the back of a can of Hunt's No Sugar Added Spaghetti Sauce. I made a few adjustments and it was really good!

Hunt's Spaghetti Sauce No Added Sugar 26oz

Cheesy Chicken Parmesan
Prep 10 min Cook 15 min Serves 6
1 egg beaten
3/4 cup grated Parmesan cheese (I used the kind that you usually sprinkle on pizza - that's all I had!)
6 boneless skinless thin-sliced chicken breast fillets (about 1 lb) I used boneless/skinless chicken tenderloins
2 tablespoons Wesson Vegetable Oil - I used Crisco Canola Oil
1 can (26.5 oz) Hunt's Traditional Spaghetti Sauce, No Added Sugar
6 slices provolone or mozzarella cheese (I used shredded reduced fat Mexican blend cheese - that's all I had!)
Place: egg and Parmesan cheese in separate shallow bowls. Dip each chicken breast fillet in egg, then cheese, coating well.
Heat: oil in a large skillet over medium-high heat. Cook chicken for about 5 mins. on each side or until no longer pink and cheese coating is golden brown. Remove from skillet; set aside. Wipe remaining oil from skillet.
Pour: sauce into skillet. Arrange chicken in sauce. Spoon some sauce over each piece of chicken and top each with the cheese. Heat, covered, over medium heat about 5 mins. or until sauce is heated through and cheese is melted.
I had a salad with this topped with Carb Well Italian dressing - this was all very delicious!
