I wanted to make that peanut butter cookie crust with chocolate pie filling recipe for Thanksgiving (it sounds delicious!), but "certain picky people" don't like the peanut butter/chocolate type of desserts!! Grrrr. So, I came up with a new idea, but similiar:
Crust made with the Chocolate Oatmeal No-Bake Cookie recipe, and then filled with Chocolate Fudge pudding and pie filling (sf, ff). Even though this cookie recipe does have some peanut butter in it, the cocoa taste overpowers it. Reviews on this cookie recipe report that picky husbands can't tell there's peanut butter in it, and that they loved it! ;-D Another bonus...there is much less fat in this recipe than in other oatmeal cookie recipes I've found.
CHOCOLATE OATMEAL NO-BAKE COOKIES
2 c. Splenda
1/2 c. skim or 1% milk
1/4 c. cocoa, unsweetened
1/2 c. trans-fat free margarine
1 tsp. vanilla extract
1/2 c. natural peanut butter
1/4 tsp. salt
3 c. old-fashioned oatmeal
optional: chopped pecans
Combine first 4 ingredients in a pan and bring to a boil on medium heat. Cool 1 minute and add remaining ingredients.
For Cookies: Stir well and drop by teaspoons onto waxed paper. These are no-bake cookies.
For Pie Crust: Stir well and press into lightly greased (with trans-free margarine) or sprayed pie plate. Press. Cool, and then add prepared fat-free, sugar-free pudding/pie filling. Refrigerate until served. Optional: Top servings with Reddi-Wip Light.
