Riffing on the pecan chicken

Thank you for the great idea about a nut mixture as breading!! I Devised a very nice recipe for dinner on my new George Forman Grill based on what I had in the house tonight!
In a food processor I put:
walnuts
shallots
lime zest
garlic powder
parmesan cheese
salt
pepper
a handfull of parsley
Then I put a little lime juice on salmon fillet and pressed this mixture into it. Sprayed it with some cooking spray and cooked it for 4 minutes in the grill.
Really yummy and crunchy.
