Uncle John’s homemade Chili
1 lbs. ground beef or turkey (I use turkey)
1 TBS garlic powder
2 lg. Onions, chopped
2 celery stalks, diced
3 green peppers, diced
1 tsp. Salt
1/2 tsp. Pepper
1 tsp. Oregano
1 tsp. cumin
1 TBS chili powder
1 (28 oz. Can) of crushed tomatoes
2 (19 oz cans) kidney beans
3-4 shots of tobasco sauce
1. Brown the meat.
2. In a separate pan, sauté 1st 4 items in 2 TBS. oil.
NOTE: I once skipped this step (by mistake), I went to step #3. My chili didn't suffer any consequences, so I will always skip this extra pan-dirtying step in the future!!!
3. Place all ingredients into a pot & simmer for 1 hour. Mix & scrape the bottom frequently (every 15 minutes or so). *** or throw everything into your crock pot (after browning the turkey) & leave on all day on low.

Personal tips: The secret's in the simmer. I let it simmer last night for 6 hours.
