In a couple of different threads, people are wondering about finding Christmas desserts for South Beach. Do you have any to share? Please post the South Beach-friendly desserts you plan to make, or are thinking about trying. Also, please remember to share which phase the recipe is for.

I made this pie for Thanksgiving dessert.
Pecan Pie Crust (all phases)
1 1/2 cups pecans, ground
3 T. Smart Balance
approx. 3 packets sweetener (I use Splenda)
Grind pecans to a pretty fine consistency
Oat Pecan Pie Crust (phase 2)
1 cup old-fashioned oats
1/4 cup whole wheat flour
1/4 cup ground pecans
2 T. Splenda or brown sugar substitute
1/8 teaspoon salt
3 T. canola oil
1 T. water
Preheat oven to 425 degrees.
Sweet Potato Pie (phase 2)
3 cups cooked, mashed sweet potatoes
1/4 cup Smart Balance -or- Fleischmann's Premium Olive Oil spread (my favorite)
1 cup Splenda
1/4 cup Sugar Twin brown sugar substitute
2 eggs, beaten
1/4 cup evaporated skim milk
1/2 tsp. ground nutmeg
1 tsp. ground cinnamon
1 tsp. pure vanilla extract
Prepared pie crust - Pecan Crust or Oat Pecan Crust recipe
Combine hot mashed sweet potatoes and Smart Balance in a large mixing bowl; mix well.
Double Layer Pumpkin Pie (phase 2)
Prepare Pecan Pie Crust or Oat Pecan Pie Crust recipe.
Filling:
4 oz. (1/2 of 8-oz. pkg.)

Basic Almond Sponge Cake (phase 2 and 3)
1. Preheat oven to 350 degree F. Butter 15" x 10" jelly-roll pan. Line with parchment and butter again. Set aside.
2. In small bowl, mix almond meal, baking powder, and salt.
3. Place eggs and Splenda in large bowl. With electric mixer, beat on medium speed until thick, light, and tripled in volume, 8 to 10 minutes. Beat in vanilla extract. Fold in almond mixture. Spread evenly into prepared pan.
4. Bake 20 to 25 minutes or until top springs back when pressed lightly. Cool in pan or on rack.
Makes 8 Servings
Per Serving: 150 cal, 8 g pro, 5 g carb, 11 g fat, 1.5 g sat fat, 160 mg chol, 2 g fiber, 190 mg sodium
Prep Time: 10 minutes
Cooking Time: 20-25 minutes
Caramel Apple Salad (phase 2)
1 large box sugar-free butterscotch pudding, prepared with skim milk
4-5 apples, chopped, not peeled
1 8 oz. container of Cool Whip Lite (or use Reddi-Wip Light)
1/2 c. chopped walnuts
Prepare pudding according to package directions.

Baked Apples (phase 2)
Core out apple.
Place in microwave-safe pan.
Fill with chopped nuts, sugar-free maple syrup and sprinkle with cinnamon.
