In a couple of different threads, people are wondering about finding Christmas desserts for South Beach.  Do you have any to share?  Please post the South Beach-friendly desserts you plan to make, or are thinking about trying.  Also, please remember to share which phase the recipe is for.

16 oz. low-fat cream cheese
3 eggs
1 cup Splenda
1 tsp. vanilla extract


Beat ingredients together until smooth.

Lemon Cheesecake (phase 2 and 3)


Crust:

Chocolate Cheesecake


FILLING
1 lb. (16 oz.) low-fat farmers cheese or low-fat cottage cheese
4 oz. light cream cheese
3 eggs
1/2-2/3 cup Splenda
1/3 cup cocoa powder (no sugar added)
1/2-1 tsp vanilla
Pam

TOPPING
1 cup low fat sour cream or yogurt
2 1/2 tbsp. Splenda

Preheat oven to 300º
Combine all ingredients for filling in food processor and process until silky smooth.
Spray 9” spring form pan with Pam.
Pour filling into pan evenly and bake in center of oven for 35 minutes.
In the meantime, process ingredients for topping.
After 35 minutes take out cheesecake and spread topping evenly over cake.
Bake for 5 more minutes.
Turn off oven, open oven door and let cake cool inside the oven.
Refrigerate and serve.

Torta di Carote - (Carrot Cake) - Phase 2
3 eggs, separated
1 cup splenda
2 carrots, finely grated
1 cup almonds, finely ground
Pinch salt
Cinnamon to taste (I use 2 tbsp)


Preheat the oven to 375 degrees F.
In a medium bowl, combine the egg yolks, splenda, and salt, and whisk vigorously until the mixture is light and airy. Beat the egg whites until stiff, and fold them into the yolks, along with the carrots and almonds. Turn the mixture into a non-stick 9-inch cake pan and bake for 30 minutes. Let cool and serve in wedges.


Yield: 4 servings

Whole Wheat Sugar Cookies

1 cup sugar substitute*
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. nutmeg
1/2 cup butter substitute
2 tbsp. skim milk
1 tbsp. lemon peel
1 tsp. pure vanilla extract
1 egg white
2 cups whole wheat flour
2 tbsp. sugar substitute
1/2 tsp. cinnamon

Combine first 10 ingredients in large bowl; blend well. Stir in flour and mix well. Place flattened 1" balls 2" apart on ungreased cookie sheets. Combine the 2 T. of sugar substitute with the 1/2 t. cinn., and sprinkle over cookies. Bake at 375 8-10 minutes

*Note if using splenda, add 2 tbsp. powdered milk

Here are a couple more recipes I have found

Mexican Wedding Cookie

Makes 16-18 cookies

1 c. oat Flour
1 c almond Flour
1/2 c butter substitute - softened
6 tablespoons sugar substitute
1 teaspoon vanilla

Mix butter and sugar substitute until light. Add flours and vanilla. Take about 1 tablespoon of mixture roll in ball. Place on greased cookie sheet in a 350 degree oven for about 10-12 minutes until golden.

Christmas Tree Cookies

1 c. almond butter
1 egg
1 c. sugar substitute
3-4 drops green food coloring
Mix coloring into egg, mix in rest of ingredients, roll out dough and cut into tree shapes. Sprinkle with splenda and bake for 10 minutes at 375deg

Maggie, Question about the Double Layer Pumpkin pie.... have you made this and if so does it fit a pie pan exactly? I'm going to make it for the family gathering but will probably need to make a 9x13 instead so wondering if I should double it or not???? Sounds YUMMY! thanks, Ruby (who hasn't been around in a while! ;( )
