This is very good, healthy and quick!!!
Asian Pork with Cabbage and Black Beans
1 (2lb) pork tenderloin
2 tbsp olive oil
1/2 small onion (diced)
2 tbsp minced garlic
chili powder
cumin
cyanne pepper(sp)
3/4 head of cabbage
2 cans of black beans
2 tsp garlic salt
Slice pork into very thin slices. Dice onion and slice cabbage into 1/2 inch slices and cut slices in half. Open cans of black beans and set aside 4 tbsp of black bean sauce. In a wok add olive oil and heat until oil is hot add garlic. Add pork in and cook slices 3-5 minutes on each side. Add cabbage, onion, black bean sauce (that you set aside). Add chili powder, cumin, 1 tsp of garlic salt and cyanne pepper to taste. Cover the wok and cook on medium high for 10 minutes or until cabbage is soft. While everything is cooking in the wok heat up black beans and add remaining 1 tsp of garlic salt, and cumin and cyanne pepper to spice it up. Serve with black beans mixed into the pork and cabbage or on the side.
