Mini Florentine Cups
1 pkg. frozen chopped spinach, cooked , well drained
1/2 c. Kraft Mozzarella Part-Skim Shredded Cheese
1/3 c. Phili Light Cream Cheese
1 Tbsp. Kraft 100% Parmesan Grated Cheese
1 Tbsp. finely chopped onion
1/4 tsp. garlic powder
24 thin deli style turkey breast slices
Preheat oven to 350 degrees F. Mix all ingredients except turkey until well blended.
Flatten turkey slices; place 1 slice in each of 24 miniature muffin pan cups. Fill each with 1 1/2 tsp. of the spinach mixture.
Bake for 15 minutes or until heated through. Serve warm.
Makes 24 servings
I'm going to switch this out a little & make Quiche Florentine for the filling but use the turkey (or maybe ham) 'cup' idea in reg sized muffin pans for an alt. P1 breakfast. Here is a quiche florentine rec. if anyone else is interested in this idea:
My Quiche Florentine (adjusted for SBD)
- 1 (10 ounce) package frozen chopped spinach, thawed
- 1 bunch green onions, finely chopped (white parts only)
- 4 eggs, beaten
- 1 (16 ounce) package 1/2% or fat free cottage cheese
- 2 cups shredded reduced fat Cheddar cheese
Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 9 inch pie or quiche pan. Place spinach in a small saucepan. Cook over medium heat, stirring occasionally until soft. Drain off any remaining liquid. Stir in green onions, eggs, cottage cheese and cheddar cheese. Pour mixture into prepared pan. Bake uncovered in preheated oven for 60 minutes*.
*if making this in muffin cups I would estimate baking time anywhere from 20-30 minutes depending on your oven. Just check on them to see when they are set & you're good to go!
PS - I use a lot of green onion in my salads & cooking - thought I'd share this tip - if you are only using the green parts you can re-grow your green onions 2-3 times by placing the left over white part into a glass of water. I have mine in my kitchen window which gets morning sun & they do great. Just change the water out every couple of days or it will get cloudy & stinky (I found out the hard way!)

You'd asked in another thread if the Florentine Cups recipe is okay for Phase 1.
