I found this recipe on foodnetwork.com. It's really called Pasta with Swiss Chard, but I found there's more Swiss chard than pasta, which is a good thing. :) As for Swiss Chard, I've developed a fondness for this new discovery!
8 oz whole wheat pasta (I used fettucine; recipe calls for penne, rotelle or rigatoni)
1/4 c. pasta cooking water (I'd start with 1/8 c.)
1 T olive oil
1/2 onion, chopped
1 clove garlic, finely chopped
1 lb. Swiss chard, washed, stems removed and coarsely chopped (I used one big bunch)
1/2 c. white wine or chicken stock
1 cup crushed red tomatoes
1 t red pepper flakes
1 T toasted pine nuts
salt & pepper
In large skillet, heat oil; stir in onion. Cook for 2 mins and stir in garlic. Add Swiss chard and toss to coat. Pour in wine or stock and stir to coat. When chard begins to wilt, stir in tomatoes, red pepper, and pine nuts. Bring to simmer; stir in reserved pasta cooking water (I found that 1/4 c made it a bit too watery).
Remember not to over cook the chard -- It's ready to serve just after it's wilted.
Add pasta, toss to coat & serve immediately. I served with grated parmesan.
Serves 2.
