Problems finding low-fat products

Hi,

I'm in the process of getting started on SBD. I live in Norway and the selection of low-fat products is veeeery limited - of course there is skimmed milk but not non-fat, there is no non-fat yoghurt, or low-fat cottage cheese/parmesan/ricotta - the only low-fat cheeses I can find are a plain type (almost like Monterey Jack) and it tastes like paper, and a soft cheese you can use on.... bread! But it has no use for cooking. Ugh.

Can I use "regular" cheese (not the ones with the most fat of course, but cottage cheese for instance) and cut down on how much I use?

I am going to some specialty stores tomorrow to see if they can order anything for me, but I imagine that would cost a TON - everything is pretty expensive over here!

There are some cheeses that are naturally low in fat.

Skim milk is non-fat milk, so you are all set there!
