A bowl of this chili fills me up for hours.  It's packed with lean protien and legumes, two of the best appetite satisfiers!

 

Maggie's Chili (all phases)

 

1 lb. ground turkey breast

1 lb. leanest ground sirloin (90-94% lean)

1/2 large or one medium Vidalia onion, chopped (that's our Georgia sweet onion; other sweet onions will do)

1 green bell pepper, chopped

3 cans* light red kidney beans

2 cans diced tomatoes (no sugar added)

1 can tomato sauce (no sugar added)

salt and pepper to taste

cayenne pepper and chili powder to taste

ground cumin to taste (I use very little)

reduced fat 2% shredded cheddar cheese

 

In your largest chili pot, combine the ground turkey breast, ground sirloin, onion and bell pepper.  Cook and stir occasionally until meat is thoroughly browned.  Drain, if needed (so lean there may be no drippings). 

Add kidney beans, tomato sauce, diced tomatoes and seasonings.  Cover and simmer for 45 minutes - 1 hour. 

 

Serve in bowls topped with a sprinkling of cheddar cheese.

 

* I use regular-sized cans of these products listed...about 15.5 - 16 oz.

can you have the chili in p1?? and dh will not eat whole tomatoes, so could i use more tomato sauce??

Yes, you can have this in phase 1.
