We have invited some people over to come watch the Playoffs on Sunday. I want to stay SB friendly in the snacks I have. I was thinking of making the Deep dish Pizza Quiches except in little muffin cups. (any ideas anyone?) I also was planning to have a dip made with fat free cream cheese and hot sauce (blended) and have veggies with that.

Can you give me some other ideas? I am in Phase 1 (finishing day 4 now) and have done so well. I don't want to mess up Sunday.

edited to add: I was also planning to do the Rueban Wraps or the California Wraps with turkey/ham.

BTW, Fat Free cream cheese is o.k. in phase 1, isn't it? I love f/f cream cheese spread on turkey, ham or any meat really.

Sorry I'm being redundant on any of the ideas, I'll just do a brain dump for ya. LOL.

First thing I thought of is chili, too. I have a great recipe I could share, but it looks like Maggie's is good to!

Other appetizer type things:
- cucumber slices with light cream cheese and smoked salmon. Cucumbers can replace crackers for dipping in nearly any setting!
- cut up veggies w/your favorite SBD-friendly dip. Hummus and salsa mixed with black beans comes immediately to mind.
- deviled eggs

Reuban wraps sound great! What's in them?

I found a salsa cheesecake recipe on several sites. I road-tested it with the family (definite non-SBDers) last week and it was a big hit.

Preheat oven to 325º
Mix together:
3 bricks light cream cheese
3 eggs
1 c. salsa (I used fresh salsa from the deli to ensure that there were no hidden sugars)
Pour into a 9" springform pan. Bake for approx. 45 minutes. (This is debatable - the recipe I found called for 20 minutes, it took mine 1 hour - just check on it I guess.

Once it's baked add the following to the top:
1 c. salsa
3/4 c. FF sour cream
1/2 c. RF shredded cheddar

Chill well before serving.
I served this with corn chips for the family and veggies for me. It was delicious.

I'd like to *highly* recommend the chicken chili recipe posted here recently. It is a major two big thumbs up (I like the spicier version.)

It takes a long time to cook (6+ hours)--but it's not hard once you throw in all the ingredients--so you would start it in the late morning, and let it cook down for hours to make your home smell cozy & wonderful. I made it yesterday for our blizzard here in New Jersey and it's wonderful. I'll try to find the recipe to bump it up.
