Good Seasons salad dressing mix is SBD-ok per the nutritionist.  I found this recipe of the SBD site message boards.  It sounds good (I sometimes have a hankering for KFC, how about you? lol), but I haven't tried it.  Please review it if you do!


 


Good Seasons Chicken


Wow! Is this good. I modified a non SB friendly version, and I like it better than the old. This is a must try! It tastes like Kentucky Fried Chicken without the breading! It is really really easy too!


1/4 cup smart balance butter
2 Tbsp olive oil
1 pkg of dry good seasons salad drssing mix
3 cloves garlic
1 pound chicken breast
1/2 can chicken broth


Put about 1/4 cup of Smart Balance Spread, or whatever spread you are using that is SB friendly. Sprinkle in a whole package of Good Seasons original Salad dressing DRY packet....2 TBS of Olive Oil, and 2-3 large cloves of garlic. Let it saute, but don't burn the garlic.


Then, lay the breasts into the mixture. Don't touch it, just let it simmer. Now flip it over when you see it a little browned. Do the same on the other side, but don't cook all the way through. Preheat oven to 350. Transfer the chicken and the sauce to a small caserole dish add about 1/2 can of chicken broth.


Cover it with foil and bake about 1/2 hr. Then, uncover and bake about 15 min more.


This is the most moist delicious juicy tasting chicken you have ever had. It breaks apart with a fork. Now, if you are in phase 2, you could add a little whole wheat pasta to the juice to make a delicious type pasta dish.

I didn't notice the sauce browning before the chicken, I didn't notice the sauce browning at all really other than what was sticking to the meat and making a nice "crust".
I think the reason for the transfer is if you are using a non-stick skillet or an non-oven safe skillet (like one with a plastic handle that can't go in the oven) I used my stainless steel/copper bottom skillet that is oven safe, so I didn't tranfer either.
I didn't think it was TOO salty - but definitely salty. But we tend to like salty here!
My "sauce" was basically liquid, not thick at all. But we just used it like that, spooned a tad on the chicken and some on our veggies.
I didn't really get the whole KFC connection either, but like you said, a lot of flavor!

This was DELICOUS!!!!!!! dh actually thought it tasted better then KFC! YEAH! W/ it we had green beans and a small sweet potatoe. HMMMM Definatly an addition to my dinners! THANKS!!!!!! ruby

I made this over the weekend and it was very good. My DH who is not on SBD even liked it. So I was going to make it again last night but was pushed for time so instead of starting it out on top of the stove I just put my chicken breast in a glass dish, drizzled with olive oil and sprinkled the Good Seasons mix over them and baked. They were very good.

I did a variation of this last night and it was awesome!! I brushed 2 chicken breasts with Olive Oil. Placed the Good Seasons on a plate and pressed the chicken into it. Then grilled it on George for about 6-7 minutes. It was delicious!!!

I agree! I made this the other night and everyone loved it. It was a bit dry, so I think I left it in the oven a bit too long, but I will definitely be making this again. I took a cue from someone else on this post and made the leftovers into a soup the next day. I took the leftover sauce from the chicken, added more chicken broth, and boiled some frozen broccoli and cauliflower in it. Then I threw it all in the blender to make a soup. I diced up the leftover chicken, threw it in, and YUM, chicken broccoli soup!! This was just as good as the Chicken dinner, and I will make this again just so I can have the soup again! Thanks to whoever suggested that!
