Banana Bread

I adapted this recipe from the cookbook How To Cook Everything by Mark Bittman. The original recipe uses white flour, butter, and sugar. I have substituted SBD friendly ingredients. The coconut in it probably makes it an occasional treat (I treat it as one anyway). It would probably be just as good if you omitted the coconut and substituted bran or wheat germ or something to give a little texture.

8 tablespoons canola oil
2 Cups whole wheat flour
1 teaspoon salt
1 1/2 teaspoons baking powder
3/4 cup Splenda
2 eggs
3 ripe bananas, mashed with a fork until smooth
1 teaspoon vanilla extract
1/2 cup chopped walnuts or pecans
1/2 cup grated dried unsweetened coconut

1. Preheat the oven to 350 degrees. Grease a 9x5 inch loaf pan.

2. Mix together the dry ingredients. Beat together the oil and eggs. Beat in the bananas and vanilla extract. Stir this mixture into the dry ingredients; do not mix more than necessary. Gently stir in the nuts and coconut.

3. Pour the batter into the loaf pan and bake for 45 to 60 minutes, until nicely browned. A toothpick inserted into the center will come out fairly clean, but this bread will remain moist, so do not overcook.
