Fried Rice or Maybe Not......

I was listening to a radio program this morning and the lady on it was a cook and a low carb devotee, so I found it interesting. She does not even eat fruit! Anyway, I was intrigued when she mentioned making fried rice from cauliflower. My dh is asian so there tends to be a lot of fried rice cooked in our house. I didn't want another salad for lunch and when I got home I thought I'd give it a whirl. I gave dh a bite and he thought it was totally passable and would eat it if I made it (of course, there is no way he would actually give up the real stuff!) I thought I'd pass my recipe along if anyone wanted to give it a try.
Cauliflower Fried Rice
2 cups grated cauliflower (I used the course grater)
1 stalk celery finely chopped
1 slice bacon (you could use turkey bacon, but I wanted the fat for the flavour)
2 Tbsp. finely chopped red pepper
2 Tbsp. finely chopped green pepper
2 egg beaters
1/2 green onion finely chopped
1 Tbsp reduced sodium soy sauce
Heat up the wok or frying pan, spray with cooking spray and quickly scramble up the egg. Remove from the pan. Add enough oil to cover the bottom of the pan and turn to med-high. Put in the bacon, celery, and peppers. Cook for about 2 minutes, then add the cauliflower. Sautee this mix for 3 or 4 minutes, stirring frequently so it doesn't burn. Close to the end of the cooking time, add the soy sauce and the green onion. Cook for about 1 minute more.
It doesn't taste exactly like fried rice, but it's pretty close!! It would make a great side dish too. If you like it, don't be afraid to experiment. You could add Canadian bacon, shredded chicken, shredded pork or shrimp. Or, omit anything that you may not like!

Hmmmm.
Give it a try and let me know what you think. I was a little dubious about the "Surprise Mashed Potatoes" too, when I first read it. But, I'll definitely make this again.

The actually head part crumbles a bit, but the stalk part grates quite nicely. Just make sure you don't use the really tiny holes. I used the large ones on my grater.
