Broiled Salmon with Creamy Lemon Sauce

From the South Beach Diet Cookbook (page 178)


Broiled Salmon with Creamy Lemon Sauce


1 tablespoon extra virgin olive oil
1 clove garlic, minced
1/4 cup lemon juice
2 tablespoons capers
1 teaspoon lemon-pepper seasoning
1/2 cup fat-free sour cream
1 1/2 pounds salmon filet


Preheat oven to 350 degrees.  Coat a baking sheet with cooking spray.


Heat oil in a small saucepan over medium heat.  Add the garlic and cook for 1 minute.  Reduce heat to low.  Stir in the lemon juice, capers and lemon-pepper seasoning and cook for 5 minutes.  Add the sour cream and cook for 5 minutes, or until heated through.


Meanwhile, place the salmon on the prepared baking sheet.  Bake for 20 minutes, or until the fish is just opaque.  Serve with the sauce.


Makes 4 servings

Cathy, thanks for posting this. It really is a quick, easy, yummy way to do fish. Highly recommended!

We made this last week and it was yummy (I usually don't like fish and my dh usually only eats fish with tons of tartar sauce, but we both liked this) Was bummed though when I realized that the sauce had to count as a "sweet treat" since its sour cream...so I doubt we'll make it again!
