Black Bean Burgers

These are great with some salsa on top.
Black Bean Burgers
3 cans black beans -- rinsed and drained
2/3 cup onion -- finely chopped
1/4 cup red bell pepper -- finely chopped
1 tablespoon jalapeno pepper -- finely chopped
1 teaspoon ground cumin
3 tablespoons sesame seeds -- roasted
1 tablespoon lime juice
1 teaspoon salt
1/2 teaspoon peppr
2 tablespoons vegetable oil
In large bowl, mash beans until most are smooth, leaving some intact.
Add onion, bell pepper, jalapeno pepper, cumin, sesame seeds, lime
juice, salt and pepper; mix well. Divide mixture into 8 equal patties
about 3-1/2 inches in diameter.
In large heavy frypan, heat oil over medium-low heat. Cook patties, in
batches, for 8-10 minutes or until lightly browned, tuning once and adding
more oil if necessary.
Carefully remove burgers from frypan to platter and tent with foil.
Let stand 5 minutes before serving.
Makes 8 burgers.
Note: These freeze very well before cooking.
