I love meal planning - it REALLY helps ensure that my family's meals will be South Beach friendly!  Having a list of options (you don't have to stick to the order of your plan) makes meal preparation more pleasant and stress free.  And makes it easier to stick to a food shopping list (which saves money)!!!

I may come back and edit later, I left my list at home but here's what I remember...

Breakfasts: cottage cheese with flavoring or microwave eggs (P1)

Lunches: leftovers or soup and salad
Soups of the Week: Thai Chicken Noodle (P2), Spicy Indian Tomato (P1)
Salad of the Week: Tuna Bean Salad (P1)

Snacks: Popcorn (P2 - popped on stove w/ canola), fruit, or nuts

Dinners:
Brown Rice Mushroom Risotto (P2)
Stuffed Peppers (P1)
Turkey Burgers on Portobello Mushroom "Buns" (P1)
WGWW spaghetti tossed with roasted veggies (P2)
Veggie Stir-Fry (P1)
Veggie Omelettes (P1)
Leftover Soup (P1)

Breakfast:
crustless quiche (either veggie or ham and mushroom), reduced fat cheese, tomato juice

Lunch:
chef salad – I never get tired of these!

Snacks:
cottage cheese w/ chopped cucumber, yogurt, nuts, celery w/ pb, apple w/ pb, mozzy sticks

Dinner:
Tonight – tossed salad, meatloaf, green beans, corn (for “them”)
Rest of the week (schedule subject to change)
- salad, “Bombay-style chicken”, cauliflower, limas
- salad, “stuffed cabbage” (recipe from a low-carb slow cooker cookbook)
- salad, broiled tilapia w/ salsa, broccoli, black beans
- salad, chicken w/ sun-dried tomatoes, SBD green bean casserole

I only meal plan my dinners because I usually have the same breakfast everyday and eat leftovers from dinner for lunch the next day so here it is....


Monday: Beef stew


Tuesday: Lean Steak with Mogue (an italian marinade made with fresh roma tomatoes, olive oil, garlic, oregano, garlic salt, basil and cilantro) and big ceasar salad.


Wednesday: Roasted Chicken Chimichangas (ww tortillas) with Home made guacamole and salad


Thursday: Flank Steak (in red wine/olive oil/ garlic marinade) and roasted broccoli and lf cheese


Friday: Parmesean Crusted Chicken Cordon Blue and cauliflower


Saturday: Spagetti with whole wheat pasta and GREAT BIG CEASAR SALAD!!

Susan - Nope, I just chop and plop 'em in there. I've never had a problem with *cucumber burps*. I do like grape/cherry tomatoes in my cottage cheese too. It just depends on what I have more of in stock... this week it's cucumbers. I'm glad to see that tomatoes are finally coming down in price again though. I was beginning to think I would have to take out a second mortgage to pay for my salads!
