Mashed Cauliflower fit for a Cowboy

Holy wow! I watched Racheal Ray on the Food Network make this, so I tried with my own ideas in mind!
1 head cauliflower (or frozen)
3 cups low salt/low fat chicken broth
1/2 cup shredded cheese (your favorites)
grated parm. to taste
salt, pepper, garlic, crushed red pepper to taste or omit
Simmer the cauliflower and spices in the chicken broth until mushy
mush down
add cheeses and mush again
Oh my... cowboy eats this up! Looks like cheese grits, but it is sooooo good! Added a little low fat pepper jack last night. We fought over it!



Don't you just love Rachael Ray? I love the SBD mashed cauliflower, but I hate taking down the food processor & cleaning it just for that. Cooking the cauliflower in chicken broth, then mashing with a masher is just so much easier. I made these without as a "base" for Beef Burgundy, and it was out of the this world. So much healthier than noodles!
