There Is Nothing In The House To Eat".
This is the title of an actual cookbook, but I thought I would take some liberties. Let's see if we can come up with a bunch of recipes here. The idea is, you didn't plan ahead, you don't want to go out to the store, and you have to use some ingenuity to come up with something South Beach friendly using what you have on hand.
Here is my first entry:
Escarole Soup
Progresso Escarole Soup
3 slices canadian bacon, diced
parmesan cheese
freshly ground pepper
Heat soup and bacon in saucepan. Serve and garnish with parmesan and pepper

Seafood Fra Diavolo (good for all phases)
1 package frozen mixed seafood (I recently discovered this product. It is a bag of mixed seafood: clams, shrimp, octopus, mussels, scallops. In my store it is found in the frozen food case next to the fresh seafood department. I keep in on hand for night when I don't want to cook).
1 jar fra diavolo tomato sauce (look for no added sugar varieties)
whole wheat pasta (if desired for phase 2 or 3)
Place seafood in colandar and run cool water over it until mostly defrosted. Heat tomato sauce, add seafood until heated through. Serve in a bowl by itself (P1) or over pasta (P2&P3)
