I had to modify this recipe just a tad since all the stewed tomatoes I saw had high fructose corn syrup. :( The original recipe calls for mexican stewed tomatoes.
2 14oz cans of black beans (undrained)
2 14oz cans of diced tomatoes w/ jalapeno's (this is the substitution and it's yummy)
1 14oz can tomato sauce
1 cup salsa (mild, medium or hot)
1 4oz can of green chiles ( jalapeno's in you're daring)
4 boneless, skinless chicken breasts
1 avocado
LF cheese
Combine all ingredients in slowcooker. Cook on low for 6 hours. I cooked it on high for about 3. Remove the chicken breasts and cut up. Add back to soup. Cut up avocado and add to soup. Sprinkle serving with lf cheese.
This is very yummy! I got it from the cookbook, Fix It and Forget It.

I had this for lunch today and it was delicious! I actually made it last month and froze the leftovers in individual containers!
