Meal Plans for week of 1/20

I'm planning my meals for this week & am getting into a rut on snacks.  If anyone else has their meals planned for the week, would you please post?  I've been surfing through posts but haven't seen much variety from what I'm already doing. ( =  Thanks!  Bets


Breakfasts - eggs/turkey bacon, quiche, oatmeal or cold cereal


Snacks - cheese sticks, celery w/hummus or PB, yogurt, cottage cheese, homemade hot cocoa, SB PB Cup, meat roll-ups


Lunch - chef salad, greek salad, tuna salad on romaine, veggie soup, l/o split pea soup, turkey wrap w/ww tortilla, Morningstar Farms burger w/cheese, lettuce & tomato in a ww pita


Dinner -
M = Lemon Dill Chicken, steamed snow peas w/lemon, roasted broccoli
T = Crockpot Beef Stew (lots of veggies & some sweet potato), whole wheat biscuits (need to find a recipe)
W = Bean & Vegetable Burritos, Calabacitas Con Queso - Zucchini with Cheese (a recipe I'm modifying a bit - I'll post if it works out)
Th = Crockpot Split Pea Soup, side salad
F = Garlic & soy grilled pork chops, green beans, black beans w/garlic, cumin & diced tomatoes
S = Grilled salmon, veggie rice, side salad
Su = Chili Parmesan Chicken, garbanzo salad, brown rice mixed with diced tomatoes & chilis

Oh goodness, I'm hoping to get ideas from others - but here are my plans for this week -

Breakfasts: 6 of 7 will be 1.5 eggs (2 whites/1 yolk) w/ 6 oz. veg juice.
7th breakfast will probably be oatmeal pancakes (killer new recipe, so good!) w/strawberries

Lunches: Salads w/protein, usually leftover fish on mixed greens.

Snacks: Red pepper strips w/prov cheese; hummus w/red pepper; yogurt w/berries; nuts

Dinners:
M - Shrimp scampi, peanut risotto, big green salad
T - Shrimp on salad, white beans provencale, broccoli
W - Beans, broccoli, risotto, shrimp (leftovers! :))
Th - OUT FOR DINNER!!
F - yet to decide. Perusing recipes...

peanut risotto

Happy to share - yesterday was my first time making this recipe and it was fabulous. It was a bit time consuming to assemble but did not require stirring like most risottos. Here it is:

1 large onion, chopped
1 clove garlic, crushed
1 tbsp vegetable oil
3/4 cup short grain brown rice
1 cup peanuts roughly chopped (I used a rolling pin)
1.5 cups mushrooms, sliced
2.5 cups boiling water (I actually used 1 cup vegetable broth w/1.5 cups water)
3/4 cup fresh green beans
2 tsps dried oregano
2 tsps lemon juice
salt and pepper
cilantro (optional, I did use)

1. Heat oil in a heavy-bottomed pot and fry the onion and garlic for 3-4 minutes.
2. Add the rice and peanuts to brown for 1-2 minutes.
3. Add the mushrooms and cook for a further 3-4 minutes, then add the boiling water, stir once, cover, reduce heat and simmer for 30 minutes.
4. Add the beans, herbs, lemon juice, salt and pepper and cook for 5-10 minutes more, uncovered, stirring occasionally.
5. Stir in a bit of chopped fresh cilantro if desired.

Notes: the original recipe called for 1/4 cup raisins to be added in step 4. I did not use them or miss them.

This recipe made a ton. I have plenty of it leftover, even after DH and DS each had 2 generous helpings along with my more modest serving.

I am looking for good barley recipes - if you have a favorite risotto w/barley, I'd be interested.

The barley risotto sounds good too. I don't eat meat so I'd use veg broth instead of the chicken or beef.

For the peanut risotto you could add meat, but in my house I don't eat meat and DH doesn't eat seafood, so I don't get much opportunity to make one pot meals...

I also make a risotto with red lentils and chopped tomatoes, you stir in some mozzarella cheese at the end. Quite yummy.
