veggie soup

I've been craving a good veggie soup lately and finally found what I was looking for-- sort of, I changed most of it except for the base.
Here's what I did:
saute 1 medium onion in 1/2 stick of butter(I used a blob of Smart Balance)
add 1lb ground beef and brown (I used ground turkey)
put these in a pot, add
1/2 C. potatoes and 1/2 C. carrots (not SBD friendly)
Well I used 1/2 C. green beans, 1/2 C. green peas, 1/2 C of lima beans and 1/2 C of blackeyed peas (I was just using everything I like. LOL) All frozen
Then I added 1 1/2 C of lentils. I've never used them before and thought I'd give it a try.
Add 1 (15oz) can of tomato sauce and 1 (15 oz) can of diced tomatoes, undrained.
I added about 2 cups of water, but you can use your judgement on that. I like it kinda thick.
I added salt and a splash of white wine to flavor.
It simmered about an hour to hour and 1/2 and it is yummy!
You could do this easily in your crockpot, but I wanted mine quicker than that. It's so easy and so yummy. : )
