Corn Bread Substitute

Cornbread (phase 1)


1 can great northern or chickpeas, rinsed and drained
4 eggs
1 1/2 tsp cumin
1 1/2 tsp baking powder
1/2 tsp salt
2 Tbsp oil (olive or conola)
1 tsp tabasco
3 Tbs. splenda
1 4oz. can diced green chilies
1/2 cup reduced-fat mexican or chedder cheese


Combine all except chilies and cheese in food processor or blender, blend for 1-2 minutes till smooth. stir in chilies and cheese. spray 9 or 10' pie dish with cooking spray, pour into dish and bake for 30-40 minutes till top is browned at 375.


Delicious poured over chili and baked.
