Queenies "Italian Chicken Soup"

During my recent bout with illness I decided to make a flavorful and SBD friendly soup.
Italian Chicken Soup
Ingredients:
3 cans of lowfat Chicken Broth
1 can Diced Tomatoes
1 can Tomato Paste
1/2 a Large Sweet Onion diced
2 (or more) Stalks Celery chopped
Garlic Cloves (to tatste)
Olive Oil
Cabbage Shredded
1 can Chickpeas
2 large Chicken Breasts
Fresh Spinach Leaves
In a dutch oven or decent sized pot add olive oil on medium heat. Add your chopped onions and celery cooking until about tender. Add in your chicken broth,, garlic and the chicken breasts. Cover. Simmer all together for about 30 mintes or so. Make sure the chicken is tender, and no longer pink. Remove chicken from the pan. Next add tomatoes and paste. Then add your chopped cabbage. Drain chickpeas put in pot. Cut the chicken into hearty sized chunks Add to soup. Stir frequently to avoid scorching. Next add in fresh spinich leaves. Buy the prewashed variety to save time. Let simmer until all the flavors come together. Season with oregano kosher slat and pepper.
Just the ticket for a cold!
