O...M...G....Nutty Cheesecake Bites!!!

And to think all this time I thought my husband was my soul mate. No longer!!! Nutty Cheesecake Bite and I are meant to be togther!!! ;-)
This is the recipe that combines 1 package of FF or LF Creme Cheese, 1/2 cup Peanut Butter (Natural), 1/4 cup Splenda, 1/4 tsp Cinnamon and Vanilla. Mix with a hand held mixer or in a stand mixer. Let chill for 30 minutes. Roll into balls and coat with chopped nuts, coconut, etc.
I coated ours with Dark Chocolate!!! If you choose to do this I would suggest freezing the rolled balls first. I mixed the dark chocolate with FF Half and Half to make a dipping sauce. THEY ARE TO DIE FOR!!!!!!!!!!!!!!!!!! I dipped some in the chocolate, some in coconut and some in cocoa powder (I did those for DH, I think they are a bit harsh in the cocoa powder). We are trying to come up with some more dipping ideas. Maybe cinnamon and Splenda???
These are so good and they really remind me of the Sara Lee Cheesecake bites!!!! This recipe is a definate keeper and will be going on our Christmas Recipes list!!!!!
The only change I made to the recipe was that instead of the Natural Peanut Butter I used a Carb friendly peanut butter that was very similar to Natural. I am a tad sensitive to peanuts and have found that the more processed they are the less likely I am to have a reaction to them. I hope it didn't change the dietary outcome too much. We must have been in the peanut butter aisle for 30 minutes trying to make the best choice. I think I got Peter Pan No Sugar Added peanut butter.
